Chicken with Lime & Chilli

Ingredients

  • 1 clove garlic, crushed
  • 1 tsp brown sugar
  • 1 tsp oil
  • 1 tsp lime juice
  • 1 tsp cornflour
  • 450g chicken thigh fillets, cubed
  • 1 green chilli, thinly sliced
  • 1 red chilli, thinly sliced
  • 8 spring onions
  • 1 tsp ground tumeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp ground nutmeg
  • Pinch ground cloves (optional)
  • 4 tbsp soy sauce
  • Juice & rind of 1 lime
  • 140ml coconut milk
  • Salt and pepper

Method

  1. Combine garlic, sugar, oil, lime juice and cornflower in large bowl. Stir in chicken and coat thoroughly with mixture.
  2. Allow to stand in fridge for at least 1 hour.
  3. Heat oil for deep frying in sauce pan or wok. Add marinated chicken. Cook, stirring frequently until browned.
  4. Add all remaining ingredients and simmer until ready!
  5. Serve with steamed rice and green beans or broccoli
