Chorizo and Herb Chickpea Salad

Ingredients

  • 3 tablespoons olive oil
  • 4x 100g chorizo sausages, sliced
  • 2x 400g cans chickpeas, drained and rinsed
  • 2 cups cooked couscous
  • 1/2 teaspoon chilli flakes
  • 1 cup mint leaves
  • 1 red onion, sliced
  • sea salt and cracked black pepper

Method

  1. Heat a large non-stick frying pan over high heat.
  2. Add 2 teaspoons of the oil and the sausage and cook for 3-4 mins. or until browned. Drain on absorbent paper.
  3. Place the chorizo, chickpeas, couscous, chilli, mint, onion, salt pepper and the remaining oil in a bowl and gently toss to combine.
