Chorizo and Herb Chickpea Salad

Ingredients
3 tablespoons olive oil
4x 100g chorizo sausages, sliced
2x 400g cans chickpeas, drained and rinsed
2 cups cooked couscous
1/2 teaspoon chilli flakes
1 cup mint leaves
1 red onion, sliced
sea salt and cracked black pepper
Method
Heat a large non-stick frying pan over high heat.
Add 2 teaspoons of the oil and the sausage and cook for 3-4 mins. or until browned. Drain on absorbent paper.
Place the chorizo, chickpeas, couscous, chilli, mint, onion, salt pepper and the remaining oil in a bowl and gently toss to combine.
