Curried Lentil and Vegetable Soup
Ingredients
- 2 tablespoons of oil
- 3 tsp curry powder
- 1 medium onion, chopped
- 1.5L (6 cups) water
- 1 large chicken stock cube
- 1 tbsp tom paste
- 1 cup red lentils
- 125g broccoli, chopped
- 1 small carrot, chopped
- 1 celery stick, chopped
- 1 small zucchini, chopped
Method
- Heat oil in large pan
- Add curry powder and onion, stir over medium heat for about 2 mins until onion is soft.
- Add water, stock cube and tom paste, bring to boil, reduce heat.
- Add lentils, cover, simmer for 15 mins.
- Add vegies, cover, simmer for about 15 mins or until vegies and lentils are tender.
