Curried Lentil and Vegetable Soup

Ingredients

  • 2 tablespoons of oil
  • 3 tsp curry powder
  • 1 medium onion, chopped
  • 1.5L (6 cups) water
  • 1 large chicken stock cube
  • 1 tbsp tom paste
  • 1 cup red lentils
  • 125g broccoli, chopped
  • 1 small carrot, chopped
  • 1 celery stick, chopped
  • 1 small zucchini, chopped

Method

  1. Heat oil in large pan
  2. Add curry powder and onion, stir over medium heat for about 2 mins until onion is soft.
  3. Add water, stock cube and tom paste, bring to boil, reduce heat.
  4. Add lentils, cover, simmer for 15 mins.
  5. Add vegies, cover, simmer for about 15 mins or until vegies and lentils are tender.
