Tuna Mornay

Ingredients
1 cup Rice
120g butter
2 medium onions
½ cup plain flour
1 ¼ cups of milk
120g grated cheddar cheese
½ cup cream
Can of Tuna / Salmon
3 eggs, hard boiled
Squeeze lemon juice
Grated Cheddar cheese (extra)
Bread crumbs (extra)
Method
Spread cooked rice over base of large greased oven proof dish.
Melt butter in large saucepan, add chopped onions, sauté until brown, remove from heat.
Add flour and stir until smooth, return to heat, stir for 2 mins.
Remove from heat, gradually add milk, return to heat and stir until mixture boils and thickens.
Remove from heat, add grated cheese and cream. Season with salt and pepper. Stir until cheese melts.
Arrange strained tuna over rice and top with lemon juice and quartered eggs.
Pour mixture onto tuna and cover with extra grated cheese and breadcrumbs.
Bake in moderate over for 30 to 40 mins or until golden brown.
